Seasoned Meat Loaf Recipe


This is a perfectly seasoned meat loaf with beef and veal recipe.


Ingredients:

1 Tbsp. Butter

1 Onion, chopped

2 Garlic Cloves, chopped

1 Tbsp. Fresh Parsley, chopped

2 Green Onions, sliced

1 1/2 lbs. Lean Ground Beef

1/2 lb. Lean Ground Veal

1/4 cup Heavy Cream

1 Egg, yolk

3 White Bread slices, crusts trimmed

1/2 cup Milk

1/2 tsp. Caraway Seeds

1/4 tsp. Nutmeg

1/4 tsp. Thyme

1/2 tsp. Savory

1 Egg White, lightly beaten

3 long Celery stalks, pared

3 Bay Leaves

Salt and Pepper

Paprika to your taste

Red Peppers, a few crushed


Preheat oven to 350 degrees F.


Directions:

Melt butter in large skillet.  Add onion, garlic, parsley, and green onions and cook 3 to 4 minutes over low heat.  Place the meat in a mixing bowl and season well.  Add cooked onion mixture and mix well.


Pour in cream and mix until incorporated.  Add egg yolk and mix again.


Place bread in a small bowl and pout in the milk.  Let it stand for several minutes and then squeeze out excess milk from the bread and place pieces in the bowl containing the meat. Incorporate well, and add all the seasonings and mix until well combined.


Add egg white and incorporate thoroughly.  Press half of the meat mixture into a 5 1/2 x 9 1/2” loaf pan.  Arrange celery stalks on meat (trim if needed) and press them in slightly.


Cover with the remaining meat and press firmly to take shape of the mold.  Lay the bay leaves on top.  Cover with a sheet of perforated foil and place the mold in a roasting pan containing 1” of hot water.  Cook for 1 hour and 15 minutes in the oven.  Remove foil at halfway point.
