Southwest Meat Loaf Recipe


Who would think that adding salsa, raisins, and almonds would be so good.  This southwestern style meat loaf has just the right blend of spices.


Ingredients:

1 Egg, slightly beaten

3/4 cup Soft Breadcrumbs

1/3 cup Raisins

3/4 cup Salsa

1/4 cup Onion, finely chopped

1/4 cup Toasted Almonds, finely chopped

1/2 tsp. Salt

1/2 tsp. Sugar

1/8 tsp. Ground Cloves

1/4 tsp. Ground Cinnamon

1 1/2 lbs. Ground Beef, lean

1/4 cup Salsa


Preheat oven to 350 degrees F.


Directions:

In a large mixing bowl stir together the egg, breadcrumbs, raisins, salsa, onion, almonds, salt, sugar, cloves, and cinnamon.  Add ground beef; mix well.


Pat the meat mixture into an 8x4x2” oval loaf pan.  Bake for 1 hour.


Drain off the fat.  Spoon the 1/4 cup salsa over meat loaf.  Bake for 5 to 10 minutes more.  Let cool for 10 minutes before serving on a platter. 


You can serve with additional salsa
